Both publish a volume, which is more than several competitors manage. Neither publishes an insulation figure or a height limit, and those are the two gaps that would most change a purchase decision.
What 28 gallons actually buys
The difference between the two models is 28 gallons, and where it goes matters more than the number suggests. In an upright barrel, extra volume largely becomes extra depth — which is the dimension that decides whether a tall person's shoulders are under the water or in the air.
So the practical decision is close to a height question. If you are average height and want the smallest footprint and the least ice, the 300 is the better buy in every respect. If you are tall and have found upright barrels leave your shoulders exposed, the 500 is why it exists.
Neither publishes a user height limit, which is frustrating and which we would put to the manufacturer directly before buying if you are near the boundary.
The case for rigid and insulated
Both models are rigid rather than inflatable, and both are insulated. Those two properties do more for a cold plunge setup than most of what gets marketed.

The costs are weight, immovability and price. A rigid insulated barrel is a two-person lift and effectively lives where you put it. If you rent or travel, that is a genuine problem and an inflatable is the honest answer instead.

Both are stated chiller compatible. On sizing: the 300 at 77 gallons, insulated with a lid and indoors, is comfortably within a 1/3 HP unit's capability. The 500 at 105 gallons sits at the top of that range — 1/3 HP will do it indoors and insulated, but 1/2 HP gives you headroom, particularly outdoors or in a warm climate.
